Vindaloo came to India’s west coast through Goa, where Portuguese wine-and-garlic marinades met local chillies and spices. Our version keeps that character: chicken marinated with vinegar, garlic and ginger, then simmered in a dark, tangy gravy of dried red chillies, cumin, mustard seed and black pepper until the heat and the sourness sit in balance.
It is genuinely spicy, but the heat has flavour behind it rather than burn for its own sake. Guests order it with butter naan to temper the chilli, or with plain basmati rice to let the sauce do the talking. If you prefer it milder or hotter, just tell us when you order — we adjust it in the kitchen.
