Chicken Tikka Masala is the dish that made Indian food famous around the world, and ours earns its place on the buffet every day — charred chunks of tandoori tikka in a spiced tomato masala, finished with just enough cream to round it out.
The difference between tikka masala and butter chicken lives in the sauce. Ours is spicier and more textured: onions, tomatoes, ginger and garlic cooked down with coriander, cumin, paprika and garam masala, left a little rustic rather than blended smooth, so you taste the masala as much as the cream.
The chicken is marinated and cooked in the tandoor first, which gives every piece a smoky edge that survives the simmer. It is a medium heat — warm and aromatic rather than sharp — and it is at its best with garlic naan, though basmati rice never disappoints.
